Alice and Chris opened Blackbird in Thirroul with the vision of creating a welcoming, community-focused café. Six years on, they’ve built a local favourite known for its consistent brews, seasonal menus, and warm connection with the people who walk through their doors.

How did Blackbird come about?

We wanted to open a small community focused business within the area we live in so Chris could stop commuting every day to Sydney for work

How long have you been operating?

6 years

What is the best thing about your location?

Initially it was the morning sun and the close proximity to the beach . It’s actually the community we’re a part of that makes the location so special

Tell us about your delicious menu…

Our menus are constantly changing due to seasonal demands. We try really hard to maintain a good price point so we don’t have to be an occasional treat

What brand of coffee do you serve, and why?

We serve Cats Pyjamas by Seven Mile Roasters.. When we opened in Thirroul there were numerous venues already operating and we wanted to find a different blend that no one else had.

What’s the secret to a perfect brew?

The secret to a perfect brew is consistency. We’re very fortunate to have baristas who have been working with us for years. They have formed great relationships with our customers and our coffee.
